Spinach is thought to have originated in the Middle East in ancient Persia (now Iran). It made its way to China in the 7th century and to Europe around the 11th century when the Moors introduced it to Spain. In fact, for a while, spinach was known as "the Spanish vegetable" in England.

Spinach grows well in temperate climates. Today, the United States and the Netherlands are among the largest commercial producers of spinach.

Spinach belongs to the same family (Amaranthaceae-Chenopodiaceae) as Swiss chard and beets and has the scientific name, Spinacia oleracea. It shares a similar taste profile with these two other vegetables, having the bitterness of beet greens and the slightly salty flavor of Swiss chard.

Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled. It is a rich source of Vitamin A (and especially high in lutein), Vitamin C, Vitamin E, Vitamin K, calcium and iron.
