This tropical fruit, also known as Carambola (Acerrhoa carambola) is mainly grown in Taiwan and Southern China. It is differentiated into two types of fruit, the smaller sour type and the larger sweet type, which is mainly used for processing. In China, a drink made from fresh and fermented Star Fruit is commonly used to treat sore throats.

Characteristics:

A low acid and low flavor juice that blends well with other juices. The juice concentrate is acidified with lemon juice to bring the pH level to <4. Star fruit contains some oxalic acid. In our products, most of the oxalic acid is removed via processing.
